Alcoholic beverages are as old as humanity itself, mentioned by various ancient civilizations and derived from cultivated natural sources. The production of alcoholic beverages goes beyond merely obtaining alcohol from carbohydrates, also involving the formation of other substances that contribute to their organoleptic characteristics, adding value to the final product. The fermentative process, essential to produce alcoholic beverages, enables the obtaining of a variety of products with different applications. Raw materials, preparation process, and storage are fundamental aspects that influence the characteristics of alcoholic beverages. Despite being ancient knowledge, it was only recently discovered the fundamental role of microorganisms in the production of alcoholic beverages, significantly contributing to the development and acceptance of these products in the market
